Chicken Caesar Pasta Salad

It's that time of year again.  It's the time of year that we grill out on Sunday, wear sandals that show off our toes & have delicious pasta salad for lunch.  Chicken Caesar pasta salad is one of my favorites. This dish just screams summer.  This simple recipe works great with leftover grilled chicken, so I always ask Zach to cook a few extra chicken breasts just for this recipe.  Now if you will all excuse me, I have to go get my toes summer ready;)

Mommy's Project 52:39 Flexible

This kid is very flexible.  She can get her little legs up over anything to get where she wants to go.  Her speech therapist is always telling me I should put her in gymnastics... which is funny because I was crazy gymnastics girl grades 2 - 6. 
She is also very flexible with our schedule.  I've been swamped with work and Dad was nice enough this week to let Ava hang out with him at work while I ran some errands around near his office.  Ava had a blast playing with the circle templates, french curves and millions of markers hanging out on his desk.  His co-workers even played along:)

Strawberry Chantilly Cupcakes

Here is a little secret for you... I don't really like most of the icing on cupcakes.  The ratio of icing to cake is usually way too high for me and much too sweet.  I love cupcakes though, so I just scrape most of the icing off. 
There is an exception to this rule for me... whipped cream frosting.  I could eat this stuff all day.  Ya know how they have that big strawberry sheet cake at the end of the salad bar at Whole Foods?  I'm the girl who gets the end piece and eats all of the whipped cream frosting:)  I found both the cake and the frosting recipes via Pinterest and they are the perfect marriage together!

My New Favorite Dinner

Roasted Chicken with Potatoes, Lemon & Asparagus from Martha Stewart.  After reading this book a little too much... (I'm the reason why Web MD should not exist), I discovered that Asparagus is good for people suffering from TMJ...  which brought me to my favorite new dinner.
This is really easy and simple to make, it just takes about an hour to roast where you aren't really doing anything.  The potatoes are so delicious, caramelized and infused with chicken juices.

Mommy's Project 52:38 Emotional

When I became a mom,  I became emotional... 500% of the time;)  It really started when I was pregnant and it never really went away.  I take too many pictures, I worry too much, I go out of my way to put pea gravel in Ava's water table vs. sand because I read something about crystalline silica dust being bad, I obsess over the right kind of sunscreen, hello... I write a mom blog!  Then there is the whole speech delay, which would make any parent start reading too many books and doing research on the benefits of fish oil.  I try not to make *too* many emotional decisions, but I think as a parent we have stronger emotions to help us better protect our kids.  So, I'm choosing to embrace my emotions.

Burke Lake Park

This weekend we hung out at Burke Lake Park.  We love to stroll around the trails along the lake and let Ava play on one of the many playgrounds... but now that it's spring the park has gotten a lot more fun!
First, they have an adorable miniature train that goes through the park and it only cost $2.50 a person to ride.  Kids under 2 ride free. 
The train was a big hit with Ava.

Honey Pecan Cream Cheese Spread

Honey pecan cream cheese is one of my favorite cream cheese flavors.  Ever.  The other day I read the ingredients on a package I bought from a local deli.  There were a few ingredients that I couldn't pronounce (which I always hate), but the one that stuck out the most... sour cream.  Huh?  Sour cream was in my sweet honey pecan cream cheese?  I took another bite of my bagel and realized sour cream is what gave it such a nice tangy flavor.  Guess who went home and tried to recreate it?
I did!

I'm hoarding this face wash and pretending like it's completely normal.  You see... Zach convinced me it was discontinued after he couldn't find it at CVS.  So, naturally when I found some at Target today I purchased their entire stock.  When the cashier asked me if I was going on a trip...  I just told her it's *really* good facewash;)

Mommy's Project 52:36 Colorful

We've been out of town (hence my blog absence) for Spring break.  We spent a lot of time in one of my favorite cities in the USA, New Orleans.  It is such a vibrant, unique and colorful city
Ava had so much fun and as you can see here... she doesn't have a shy bone in her body;) 
We ate lots of snowballs in every flavor and color available.

The Shed

After *much* deliberation... I finally bought a new dresser off craigslist. My old modern dresser was literally falling apart and I needed drawers that my clothes would actually fit into.  We went to pick up the dresser this weekend and were pleasantly surprised when we pulled up.  It was kind of like being on an episode of American Pickers...
The lady I purchased the dresser from is actually a picker herself and had *tons* of cool old stuff.
