Happy Birthday To Me!

For my birthday last week, my awesome husband gave me the toddy cold brew system!!  Last summer I started making iced coffee in my french press, but at the rate I drink coffee it was time for the Toddy!!  I'm pretty sure the toddy will pay for itself in about two weeks...  It's been so warm this week, so the timing was perfect.  It's basically a bucket that comes with a filter, plug and glass pitcher to filter the coffee into.

I love cold brewed iced coffee.  It has 67% less acid than hot brewed coffee, so it's a lot less bitter.  We used the toddy to made iced coffee back in my brewsta days in college. 
It has a really think filter that goes in the bottom of the bucket.  I've made iced coffee in my french press and also filtered it though cheese cloth... but this filter really makes the smoothest cup of iced coffee.
You plug the bottom with the rubber plug.
This is how I like to make iced coffee... plug the bottom of the bucket well and put in the filter.  Grind 1LB of freshly roasted coffee on a very coarse grind and put into the bucket. 
Slowly add cold water to the grinds, making sure to cover all of the coffee grinds until they are saturated and reach the top.  I move the bucket around under the water as I fill it up to cover all of the grinds.  If any coffee grinds do not get saturated, you can gently stir with a spoon.  (I've never had to stir them...)
Let it sit out on your counter for at least 12 hours.  I usually do this at night and drain it in the morning.
The next morning, pull the plug out of the bottom of the bucket and place on top of the glass carafe.
Let it drain for at least 30 minutes. 
Make a mental note of how much coffee concentrate you have.  I rinse out an old milk container to store my iced coffee in the fridge.
After you pour the coffee concentrate into your container, add the same amount of water to the jug.  No, my water isn't that color... it's from the coffee left on the container.  It's not dirty I promise;)
The iced coffee will keep in your fridge for up to two weeks.  I love not having to brew coffee or clean my coffee pot every morning!
I picked up one of these reusable cold drink containers at Target for about $10.  If you see me between the hours of 7am - 11am... chances are this will be in my hand until next fall.

My favorite thing about cold brewed coffee is the lower acidity .. much easier on the stomach.
